Food Fortification
   
Being highly water soluble and more bioavailable, CCM is the choice of calcium salt for varity of food fortification.
 
Soymilk Fortification : The presence of phytate in soymilk impairs the bioavailability of minerals especially zinc and caalcium 5,6. CCM is less amenable to the formation of calium phytate complex than any other calcium salts and therefore should be more effective for fortification of soymilk products6.
 
Fruit Juice Fortification : Calcium is added to some commercial orange and grape fruit juices, expanding the choices of high calcium beverages for consumers who may not drink milk. Calcium fortification with CCM upto 60% of adequate intake had little influence on the sensory characteristics of an orange flavored beverage7.
 
Meat and Beef Fortification : Processed meat products can provide an important opportunity for calcium supplementation since such products are consumed by people of all ages1. CCM is a potential calcium supplement source for the fortification of a reduced fat emulsion beef8.
